A different delicious carrot and chocolate fudge cake! No eggs, vegan!
What can be better to celebrate the first day of summer then by making a delicious eggless, dairy free chocolate carrot cake that’s fluffy, moist, delicious and sooooo beautiful?
INGREDIENTS:
For the cake:
2 medium carrots, chopped (2 cups)
3/4 cups of vegetable Oil
1 cup. of water
1 cup. and 1/2 of sugar
1/2 cup. corn starch
2 cups of wheat flour
1 tablespoon of baking powder
1 tablespoon of apple cider vinegar
For the chocolate fudge:
270g of vegan sweetened condensed milk (recipe on my channel or website)
3 tablespoons of cocoa powder
1 1/2 tablespoon of vegan butter or coconut oil or margarine
A pinch of salt
METHOD:
Carrot cake:
Blend the carrot, oil, water and sugar in a blender. Transfer to a bowl.
Add and mix the cornstarch and wheat flour until a homogeneous batter takes shape
Add the baking powder and apple cider vinegar and mix gently.
Pour the batter into a greased pan.
Bake for approximately 35/40 minutes at 240°C/ 464F. It varies from oven to oven, so it's always a good idea to keep an eye on it
Chocolate fudge:
Put all ingredients for the chocolate fudge in a pot and mix over medium-low heat.
Lower the heat and continue mixing for a few more minutes until the fudge starts to get a bit more thicker.
Remove the cake from the oven, wait until it cools down completely then remove it from the mold and place it into a plate and pour the warm chocolate fudge all over it.
Serve it and enjoy!

    This recipe is amazing! Substituted date syrup for the sugar and added a quarter cup of caraway seeds.. The bread gets better with age. Just throw my breads into a big empty pot and put the lid on for stroage. Keeps fresh and tasty. Great bread for keeping one regular.

    This is the BEST EVER recipe for soya mince! I used it to make spaghetti sauce last night and it was AMAZING! I'm going to sub meat with this and can envision ANYTHING you can make with ground beef. I have boxes and boxes of Bob's TVP and I tried to make it one time and it was awful. I soaked it first, and there was the first mistake. Now I know the trick! My carnivore husband also loves it now - better than beef by far. As someone else commented, I used Vegeta plus a leftover mix I had that was very similar to your Brazilian allspice. It's very, very versatile, that's for sure! Thank you very much for sharing the secret to preparing this with such incredible results!

    Tx for this recipe. I've just discovered chickpeas and am making all sorts of things with it (including aquafaba). I'm finding all sorts of recipes using both chickpeas & aquafaba - chickpeas: milk, butter, cheese, tofu, mayonnaise, flour, protein substitute in various vegan dishes & sauces - aquafaba: cream, frosting, ice-cream, meringues, egg white substitute (it does make mayonnaise but uses a lot of oil so I use chickpea tofu instead which uses a lot less oil)

    I've made this bread multiple times, including this morning, and it is always so delicious. I used almond milk and grapeseed oil. This go round my oven is down, so I made it in my toaster over at a reduced temperature 360° (my toaster oven only operates in increments of 10°) and for 35 minutes. We've been going through store-bought bread so quickly these past several months I decided it was time to start making bread again. Let the bread cool down as much as possible before cutting into it if you're planning to cut it into sandwich slices. My family gets a little too excited when I make bread and usually want to cut it while it's fresh out the oven. No, not this time! 😆 My sandwich was delicious!
